Strawberry Melon Smoothie

Smoothies are my ultimate comfort food. There's something about that sweet, creamy fruit that gets me every time. Yet I'm wary that most smoothie recipes can turn out to be a massive sugar and fat bomb from a nutrition perspective. That's why I've spent years experimenting to perfect smoothie recipes that have a reasonable fat, carb, protein, and fiber ratio. My smoothie recipes are health coach approved to double as a meal replacement instead of just dessert! And don't worry, I didn't compromise on flavor! This creamy strawberry concoction is like frozen yogurt in texture and flavor, and each bite will satisfy your sweet tooth (without the sugar crash later.)

Strawberry Melon Smoothie

Try this recipe for a healthy dessert, afternoon snack or power-up breakfast!

Makes 2 servings.

Ingredients:

  • 1 cup unsweetened Silk organic plain soy milk (can sub another milk of choice such as almond or oat milk. I used soy since it is naturally sweet and high in protein. Check the ingredient list to make sure there are no oils or chemicals added.)

  • 1/2 cup Sunwarrior brand vanilla protein powder (I love the flavor of this brand but you can sub for your personal favorite vanilla protein.)

  • 1 TBSP SunFiber brand unflavored guar gum fiber supplement (helps to slow down the absorption of sugar so you don’t get a sugar crash, as well as give the smoothie a thick and creamy texture.)

  • 1 heaped cup of frozen sliced organic strawberries (or 1.5 cups whole frozen strawberries.)

  • 2 cups cubed frozen organic watermelon or honeydew melon

  • 1/4 cup organic coconut yogurt (I love CocoJune for thick and creamy texture.)

  • 1/2 cup puffed cereal such as Khorasan wheat puffs

  • Extra strawberries for topping

Directions:

  • Use a high powered blender such as a Vitamix to blend everything except for the yogurt, cereal and extra topping strawberries. If the blade is on the bottom, it is helpful to first add the liquid, then powder, then fruit last. Blend until very smooth, the texture of frozen yogurt. If your blender lower power and struggles with large chunks of frozen fruit, use fresh melon instead of frozen.

  • Divide into two servings in a chilled bowl or mason jar (I stick mine in the freezer beforehand so the smoothie doesn’t melt as fast) and top with a dollop of yogurt and sprinkle of cereal.
